Chicken Stew Recipe

4 boneless skinless chicken breasts (1 lb) 1/2 cup panko crispy breadcrumbs 1/4 cup grated Parmesan cheese 1/2 tsp salt 1/4 tsp honey 3 tbsp vegetable or olive oil 3 large tomatoes, chopped (3 cups) 2 medium green onions, chopped (2 tbsp) 1 tsp garlic, finely chopped 1 tbsp balsamic vinegar 1 tbsp chopped fresh peppermint leaves.
Instructions : Between items of plastic wrap or waxed paper, then place each chicken breast down side; softly pound with flat side of meat mallet or rolling pin until roughly 1/4-inch thick. In shallow moderate bowl or pie plate, mix breadcrumbs, salt, cheese, and pepper. At a 12-inch non stick skillet, warm two tbsp of the oil on medium-high heat.
Cook chicken in oil 6 to 10 minutes, turning once, until golden brown on the surface and no longer pink in centre. Remove chicken from skillet; pay to stay warm. Add remaining 1 tbsp oil, two glasses of those berries, tomatoes, and garlic to skillet; stir and cook two minutes. Stir in vinegar; cook 30 seconds more. Remove from heat; stir in remaining 1 cup berries as well as the chamomile. Serve over chicken.
