Over the years, Slow Food has always supported high quality artisan productions, promoting raw milk, the biodiversity of breeds, our connection to land, animal welfare, respect for the landscape and the expertise required to make cheese, showing how all of these elements are essential characteristics of the most interesting and complex cheeses.
In the 2017 edition of Cheese, we will maintain our strong commitment to a subject that has been a constant cornerstone of the event: raw milk products. Another theme is naturalness (cheese made without industrial yeasts, but also extending to other products, including cured meats and wine), which will also be the subject of conferences and workshops.
So get ready to blow out the candles for our twentieth birthday!
